Sugar Cookie Pizza

Have you ever had Sugar Cookie Pizza?  I saw something called this on Pinterest and decided, I would make my own version!
1 Roll Sugar Cookie Dough (Our you can make your own... I'm Lazy.)
1 Can Frosting of Your Choice (I've used vanilla and strawberry.)
Fruits of Your Choice
I've used: Kiwi, Strawberry, Blueberries, and Raspberries. The options are endless!
Sugar Cookie Pizza
I put the sugar cookie dough on the stoneware to cook. I followed the directions on the cook time, but I think it takes a little bit longer to cook on this kind of pan. When it is done cooking, I let it cool to room temperature.  I actually usually bake them at night, and do the rest the next day.  I iced them with the icing.  The green icing in the pick happened because, I happened to have a left over jar of green Christmas Icing in the pantry.  Trust me.  I buy all of my boxed mixes and icings at the after the holidays sales!  You will never find them cheaper!!!
After putting on the icing, I layered on my fruit.  One hint about the fruit: let it have time to dry after rinsing.  The last one of these I made got a little running on top because I didn't give the fruit enough drying time!
Cut and eat!  This is so easy, yet it looks really fancy!  It also makes you feel like you're eating something healthy because of the fruit! (I'm not condoning this as a healthy food. I'm just saying, it has healthy components!)

Chili: My Favorite Food!

I make chili all of the time! My recipe is really simple and tasty!  When I get in a mood for spicy foods, this is one of my go to meals.
1-2 lbs Ground Beef
1 Large Onion Chopped
1 Can Rotel Chiles and Tomatoes
1 Can Red Gold Chili ready Tomatoes with Onions
1-2 Cans of Tomato Soup
1 Can Chili Ready Beans or 1 Can Red Kidney Beans
1-5 Tbs of Chili Powder
1-3 Tbs of Cumin
1-2 Tbs of Ancho Chili Powder
1-2 Pinches of Salt (I usually skip this.)
1 Tbs Ground Black Pepper
* A lot of the seasoning is to taste, and I substitute a lot of different things if I'm out of something else.
Chili, it's what's for dinner!

I brown the ground beef with the with the onion. Then, I drain the grease a little bit.  I then, just start adding the cans of ingredients; Rotel, Red Gold Tomatoes, and the can of soup.  Sometimes, I add an extra can of tomatoes or Tomato Soup. Then, I add in the seasonings.  This is all to taste! How spicy do I feel today?  I usually just start pouring the ingredients in. I don't measure anything.  I usually don't add salt, because salt is not good for the body.  Plus, a lot of the canned foods already have salt in them.  I taste a lot while cooking! After I get everything in the pan going, I bring it to a simmer.  I let this simmer for about ten to fifteen minutes to get the flavors going.  Then, it's ready.
I either put out tortilla chips, shredded cheddar cheese, and sour cream, or I can go the completely opposite direction and put out spaghetti, chopped onion, shredded cheddar cheese, and chili sauce.  Then, it's like a Chili Five Way from Steak 'n Shake.

Hearthstone Coffee House and Pub

So, Ian and I went to Hearthstone Coffee House and Pub on Tuesday night.  This night was their Special Friends and Family Night. Every thing was half price!!! This was also Hearthstone's second day open.   
The service was a bit rough for their second night open.  Hopefully, this can all be worked out in the next couple weeks! 
I was also kind of sad that when I looked at their restaurant's web site, I realized the only meals that are really served at Hearthstone are Breakfast and Lunch.  All that are available in the evenings are minimal appetizers.  I don't drink alcohol, and I'm not a huge coffee drinker.  So, the point of going to Hearthstone for me was food, and their wasn't that much to choose from.
Ian and I ordered at 6:44pm.  We ordered a full Cellerman's Plate and a full Veggie and Cheese plate with a small Snickers Cappuccino and a medium White Chocolate Peppermint cappuccino.  We went and sat down in the bar and waited.  When it hit 7pm, I went up and talked to the boys making the coffee.  We had not received anything we had ordered at this point.  I asked where our drinks were.  They told me, there were still two other tickets/orders in front of ours, and I had to wait.  (They said this nicely.)  I was a bit shocked.  So, I sat back down, and we waited some more.  Finally, about five minutes later, our Cellerman's Plate came out.  Then, one of our coffees came a few minutes later, then, the Veggie plate, and finally, the Snickers Coffee came last.  We finally had everything we had ordered at around 7:10pm.  That felt like an eternity because I was STARVING!

Here's a secret: I was an official taste tester before they opened. This coffee was pretty good!



Cellerman's Platter
Ian and I shared the Cellerman's Platter and the Veggie Platter.  They were actually pretty heavy in the gut by the time we got through them.  We actually couldn't completely finish them.   The olives and the cheese were amazing.  I enjoyed the salami slices too. 


Veggie Platter
I really enjoyed the peppers and the cheese on the platter.  Ian and I both love a good olive.  These olives were up there in flavor.

Antler Chandelier
When I finally own a house, I hope to be one of those people that would be hip enough to pull this off in my decor.  But for now, I'll just have too look at the one at Hearthstone. 


Fire in the Bar
There's always a little fire burning in the bar at Hearthstone.
I need to go back and check Hearthstone out again.  They have cool events all the time.  They have things like; Knitting night, Game Night, and live music.  
The main goal of Hearthstone Coffee House and Pub is to create a community atmosphere.  With the events they have, they really do this.  
Who knows, maybe some night, I'll get there for Knitting night! I also hear that now, they carry cupcakes from the Flying Cupcake, my personal favorite.  Their menu is ever evolving.

The Crust Trick

My Pampered Chef friend, Karen, taught me this.
Ingredients:
2-3 Garlic Cloves (I love garlic, so, I use three!)
3 Tbs. Olive Oil
1 Pillsbury Pizza Crust
Garlic Olive Oil Mix
I start by using my Pampered Chef Garlic Press, I press three large cloves of garlic into a small bowl.  Then, I add my olive oil to the boil and mix it together.  I spread the mixture on to the stoneware with a basting brush.  It helps season the stoneware and makes the pizza crust taste awesome!  I then, put my dough onto the pan.  I use Pillsbury canned dough, but I'm sure any dough will work with this.  
After the pizza is cooked, you can taste the extra garlic in the dough.  
This is just one of the little tricks I use when I cook.  
*I use a lot of Pampered Chef Products in my cooking because I like them.  I'm sure other products work, I just happen to have and like the Pampered Chef ones.

Hawaiian Hay Stacks

Have you ever had a Hawaiian Hay Stack?  I think they're delicious, but my boyfriend had never had them before!
Ingredients:
Cooked Rice (Brown, White, or Quinoa, it's your choice!)
Shredded Cheese
Ham or Chicken: I happened to have left over ham, since it was the week after Easter, so, that's what got used! These would also be really easy to turn into a vegetarian dish!
Assorted Veggies:
I used red onion and red/orange/yellow peppers.  You can use any vegetables you have around and can eat raw.
Pineapple  
Canned Creamy Soup or Creamy Gravy (Prepare as the can instructs.)
I used cream of celery.  I know some people use cream of mushroom or cream of chicken.
Hawaiian Hay Stack
After the rice, soup, and meat are cooked per package instructions, build your haystack!  I started with rice. After that, my cream of celery soup.  I added my vegetables and pineapple on top of that, with the ham.  I top off with cheese!  
This was my first attempt of making Hawaiian Haystacks at home.  It does take some prep time to cut the veggies, make the rice, and cook the soup, but the prep time wasn't too awful.  I did make this as an after work meal.  I don't like my after work meals to take up too much time!  I like to be able to eat within an hour of getting home from work.

Reuben Pizza: Made at Home

My boyfriend and I love Reubens!  So, I started thinking, what would be better? A Reuben pizza!

Here's what I used:
1 Pillsbury Pizza Crust
1/2-1 Package of Deli Sliced Roast Beef Sliced into Strips
Thousand Island Dressing
Sauerkraut
1/2-1 Cup Shredded Parmesan
4-5 Slices Swiss Cheese
1 Cup Shredded Mozzarella

 Reuben Pizza
First, I laid the Pillsbury crust on the stoneware and baked it for about 7 minutes. Then, I took it out and started adding toppings.
I put on the Thousand Island Dressing. I added about a cup or more. You can do this to taste. I prefer a saucier pizza.  On top of that, I put on the sliced roast beef and the Sauerkraut. Then, I added the cheese. You can add as much cheese as you like.  I used about four or five slices of Swiss cheese torn up, about a cup of Mozzarella, and about a half of cup of Parmesan. After I added all of the ingredients, I baked for about ten more minutes. I watched to seen when I thought the crust looked done and the cheese looked melted before I took it out. 
This turned out really well!  Next time, I may add more sauce/dressing or put more dressing on the side for dipping.  I would also love to make a wheat crust, but for now, the Pillsbury Crust is working out. This is an experiment worth trying if you like Reubens!

The New Out Look

Here's the thing: I love Pizza! I still do! But I've been working really hard at eating out less!  So, the Pechin's Pizza a Week blog is going to be more about eating at home too! 
There's a couple reasons I'm doing this.
1. I'm trying to eat healthier.  It's easier for me to eat healthier when I eat at home.
2. I'm trying to work on my budget.  It's better for my budget when I eat at home!

I'm going to work on posting more! A lot of these posts are going to be about eating at home though!  I hope you can all still enjoy this.
